Shake with ice and strain into ice-filled short glass. Slap a sprig of mint between your palms to release the fragrant oils, and tuck it into the edge of the glass.
*Ginger Syrup. Peel and cut ginger into chunks. Steep in simple syrup mixture for 30-60 minutes until desired flavor. Strain and Refrigerate.

1 sprig fresh mint
Combine top ingredients in a glass/shaker and mix. Pour into glass with large ice cube. Slowly pour lemon juice over a spoon to float, then repeat with club soda. Garnish with mint and pomegranate seeds.

Dip blueberries into simple syrup mixture then roll in sanding sugar.
Mix cocktail in glass with ice. Slowly pour over coconut floater. Garnish with sugar coated blueberries.
